Summer Herb Potato Salad
This herby potato salad is seriously addictive and a delicious side for any summer bbq or block party.
Ingredients
1kg Potatoes
500g fine Peas
4 Spring Onions
a big handful of fresh Parsley
a big handful of fresh Dille
a big handful of fresh Chives
a handful of Capers
a few sour Pickles
2 tsp of Dijon Mustard
5-7 tbsp Mayonnaise
some Extravirgin Olive Oil if necessary
Sea Salt
Peel the potatoes, halve (or quarter, depending on their size) them and make little slices. Place them in a pan, cover with water and add some salt. Boil until soft, then drain and set aside to cool.
Do the same with the peas.
Finely chop all the herbs and place in a big bowl. Add the capers, potatoes and peas (when cooled) and slice the pickles in tiny slices, adding them in too.
Add in the mustard and mayonnaise and stir until incorporated. At this point you’ll want to taste it to see if it needs a little more salt (depends on the kind of mayonnaise you’re using) and olive oil if it feels tad too dry.
