Lemongrass Ginger Iced Tea

 
 

A refreshing herbal and healthier version of the classic iced tea.
Great to make for summer dinner parties or brunch.

 
 
 

Ingredients

Roughly 15 slices of fresh Ginger
4 stalks of fresh Lemon Grass
Juice of 1/2- 1 Lemon
1L boiling Water
Honey to taste

Bash the lemon grass with the handle of a knife, breaking it to release the flavours.

Place in a heatproof decanter or pan together with the ginger and pour over the boiling water. Set aside until lukewarm.

Add the lemon juice (start with half a lemon and add more from there, minding the taste) and stir in honey to balance out the acidity of the lemon until dissolved. Usually this amounts to between 2 and 4 tbsp of honey.

Set in fridge to cool further, serve ice cold.
