Fennel Caper Salad

A deliciously fresh and crunchy change from a regular green salad. The sweetness of the fennel with a hint of sour lemon and the acidity of the capers hit just the right spot.

Ingredients

2 medium sized Fennel bulbs

1 small finely minced red Onion

2 tbsp minced Capers

3 tsp Caper Brine

3 tbsp Extra Virgin Olive Oil

zest half an Orange or a Lemon

Salt to taste

freshly ground Black Pepper to taste

a Mandoline Slicer

 
 
 

Chop off the greens and tough bottom of the fennel bulbs, set aside the fluffy green parts. Slice the bulbs lengthwise in half and then run them through the mandoline. Then wash thoroughly to make sure there is no grit caught between the layers and dry well.

Arrange sliced fennel on plates and toss the onion, capers and orange zest over it. Then drizzle over the caper brine and olive oil. Garnish with the fluffy fennel greens and salt and pepper.
