Yaki Soba

One of my favourite comfort food dishes that’s not so unhealthy at all, which adds to the comfort. Colourful and full of asian flavours and surprising textures, a feast for the eye, heart and tummy.

 
 
 

Ingredients

Dried Soba Noodles

200g Shiitake Mushrooms (fresh)

one bunch of Spring Onions

one Long Red Sweet Pepper (Or regular red bel pepper)

one big Onion

Shrimps

Soy sauce to taste

Roasted Sesame oil

Pickled ginger

Crispy fried onions

Tuna shavings

Serves 3

Start by slicing the onions and red sweet pepper into thin long wedges. Fry them until soft and set aside in a bowl.

Finely slice the bunch of spring onions and fry 3/4 of them with the shiitake mushrooms (also sliced). Set aside with the onions and pepper.

Chop each of the shrimps into 2-3 pieces (depending on the size of your shrimp). Fry them with a bit of salt. Set aside with the rest.

Cook the soba noodles according to the package. When ready, strain and put them into the frying pan, adding the bowl of ingredients you’ve just been frying. Add a small swig of soy sauce (taste to see if you want to add more, but it really doesn’t need much) and another small swig of the sesame oil. Stir until everything is combined.

Serve topped with the 1/4 of spring onions, sprinkled with the crispy fried onions and tuna shavings. Roughly chop some pickled ginger and add it on top too.
