Summer Fruit Salad with Rhubarb Compote
A delicious healthy bowl that tastes like summer, to enjoy on those warm sunny days when you don’t feel like having a big meal.
Ingredients
for the Rhubarb Compote
2 stalks of Rhubarb
1/2 cup Date Syrup
1/2 cup Orange Juice
1 tsp Vanilla Extract
for the fruit salad
half a Mango
half an Orange
200g Raspberries
a thick slice of Pineapple
400g Strawberries
half a Lime
For the Compote
Chop the rhubarb in chunks of roughly 3-4 cm and place into a small sauce pan. Add the date syrup and orange juice and bring to a boil. Then turn down the heat to a simmer and simmer until the rhubarb is soft and falling apart (5-10 minutes). Then add in the Vanilla Extract and let cool.
For the Fruit Salad
Now obviously you’re free to many any variation of this, but personally I thought it was a good combo. Chop up all fruit in small cubes and squeeze out the lime over it, giving it a good stir. This will help bring out the flavour and juices of the other fruits.
Ladle in a few tablespoons of the compote and enjoy!
