Summer Bulgur Salad
A light yet satisfying summer salad, full of fresh herbs so each bite is an explosion of flavour. Serve with a side of hummus and couple of slices of grilled chicken breast or beef sausage for a perfectly rounded summer meal.
Ingredients
300g Cut Bulgur
300g Cherry Tomatoes
roughly 20g fresh Parsley
roughly 15g fresh Basil
roughly 15g fresh Chives
roughly 15g fresh Mint
1 Lime
Salt
Extra Virgin Olive Oil

The important thing in this recipe is to chop every ingredient very finely, so that the flavours blend really well and you don’t get stuck with just a mouthful of mint or something.
Cook the bulgur according to the package. It’s best to use roughly cut bulgur instead of whole bulgur for the same reason we’re chopping everything very finely.
Finely chop all fresh herbs and cherry tomatoes and place into a big salad bowl.
Once the bulgur is cooked, let it cool off and then add it to the rest. Stir well, adding olive oil, lime juice and salt to taste.
