Mixed Candied Peel

 
 
 

An ingredient used for many traditional English recipes (such as Mince Pies and Christmas Pudding), which you can buy readymade in a jar in England. But since I don’t live in the UK - and the homemade kind is so much tastier - I decided to make it from scratch. This Christmas, it was very much worth it.

Ingredients

2 Oranges preferably organic

2 Lemons preferably organic

2 cups of granulated Sugar

2 cups of Water

 
 

Wash the oranges and lemons well (especially if they are not organic or if they are waxed, in which case you’re going to want to scrub them a bit under warm water).

Peel them and place them into a saucepan. Add the sugar and water, making sure that it covers the peel. Bring to a boil and then reduce heat to a simmer. Simmer for about 1,5 hour, until the peel looks a little translucent. Remove from heat and allow to cool a little.

Once the peel is cool enough to handle, chop up the peel slices into tiny little cubes. Store in an airtight container covered in its syrup for up to two months.
