Honey Walnut Cake

Having a walnut tree in the garden, I have way too many walnuts this time of year - even after giving away a few kilo’s worth of giftbags to friends. So it’s high time I started incorporating them more in my cooking. This cake is deliciously light and airy little. Each pillowy bite has a sweet aftertaste of honey and a little surprise of bite in the walnuts. Perfect for teatime.

 

Ingredients

1 cup Honey

1 cup chopped Walnuts

1 cup granulated Sugar

1 cup strong Black Tea (cooled off)

2,5 cups Self-Raising Flour

1/2 cup Sunflower Oil (or other neutral vegetable oil)

2 Eggs

Rectangular baking tin

Preheat oven to 165 degrees celcius.

Beat together the eggs, sugar and tea until light and fluffy (about 10 minutes). Then add the honey and oil and beat shortly until just incorporated.

Gently stir in the flour and walnuts and then pour into a lined baking tin.

Bake for 40-50 minutes until goldenbrown and springy to the touch.
