The best, comfortingly sweet, warm golden medicine for a sore throat or a light cold.

Ingredients

1 Lemon

1 tbsp good quality Honey

a few slices of Ginger

Optional: a few twigs of fresh Thyme

The simplest version is just to take a cup and press a layer of about 1cm of lemon juice into it. Then pour hot (not boiling) water into the cup and take a tablespoon of a good quality honey, stirring to dissolve. Taste to see if it needs more honey or lemon.

If you want to switch it up a bit and give it a little of a kick, you can boil a few slices of ginger in water for 5-10 minutes, and then use that water to make your honey lemon.

If you really have a cold; Thyme is an immune boosting herb with antiviral, antimicrobial and decongestant properties. Boil a few twigs with the ginger. It will have a strong taste but it will feel good to sip on as you’re recovering.
