Entire Beet Salad

Such a delicious, stupidly simple, colourful and nutritious salad, that it makes me angry that they don’t often sell the whole beets including the greens.

Ingredients

3 whole Red Beets (including their greens)

1 small red onion

Olive oil

Lemonjuice

Salt

 
 
 

Separate the beets from their greens, wash well. If they have a smooth peel, you don’t even need to peel them. If they’re looking a bit grimy, peel them first.

Then chop them up into bite sized pieces and steam until soft. You probably want to add the first part of the stems too as they can be a little tough (chop up the stem until the green part really starts, add to beetroot for steaming). Then set aside and let cool.

Wash the beet greens and chop them up. Finely dice the red onion and toss together in a salad bowl. Add the cooled down beets and season with olive oil, a squeeze of lemon juice and some salt to taste.
