Date Truffles

Healthy (though high in caloric count and natural sugars, so be forewarned) date Truffles. A bite to soothe any sweet cravings without the guilt.

 
 
 

Ingredients

2 cups Medjool Dates

1 cup Almond Meal

6 tbsp Cacao Powder

handfull Coconut flakes or other topping of choice

Make sure the dates you are using are of the big soft kind. Remove the pits and place in a foodprocessor to blend until it becomes a paste (you’ll need to scrape the sides a few times, and you can add a tbsp of water or so if necessary).

In a big bowl combine the almond meal and cacao powder before adding the date paste and mixing it all together using a rubber spatula. Take a small amount of the dough and roll it into a ball in your hands.
Sprinkle the coconut flakes on a small plate and roll the ball through it (make sure your hands are clean or they will end up brown) until it is completely covered in flakes.

You can be creative and use other toppings; crushed nuts of any kind, matcha (though it will turn nearly black if you don’t eat it immediately), cookiecrumbs, etc.
