Coconut Mango Chia Pudding
A slightly decadent-tasting version of the healthy simple Chia Pudding. Delicious for breakfast or even as a humble healthy dessert.
Ingredients
Chiaseed
Coconut Milk (canned full fat for a more decadent flavour)
Raw Cane Sugar
1 Mango
Prepare the night before if you’re meaning to have it for breakfast.
Take a tupperware box and pour in some chia seeds (it will expand about triple in volume so put in a little less than you think you’re going to need). Pour in enough of the coconut milk to make the seeds swim freely.
Sweeten to taste with a little raw cane sugar or another sweetener of choice. Stir, cover and place in the fridge.
In the morning, take a portion of pudding out of the fridge and put it into a bowl or glass. If it’s gotten too hard and thick, you can thin it out with whatever nut milk you have in the fridge. Pour a little over it in your bowl, stir well and give it a minute to readjust.
Peel the mango, cut up into pieces and blend until it takes a mousse like texture. Pour some of the mango mousse over the chia pudding and enjoy!
